5 Wilson's Lemonade Mocktails Anyone Can Make at Home
A bottle of Wilson's is already a finished drink. It is also a very good starting point. Because it is made with real lemons and never from concentrate, it behaves like fresh lemonade in a mix, which means you can build proper mocktails at home with almost no equipment.
Each recipe below makes one tall glass. Everything is available in a normal Lagos kitchen or the nearest supermarket.
1. The Classic Cooler
The everyday upgrade. Cold, sharp, done in one minute.
- 200ml Old Fashioned Lemonade
- 4 ice cubes
- 2 thin cucumber slices
- 1 lemon wheel on the rim
Build it straight in the glass: ice first, lemonade over the top, cucumber pushed down the side. The cucumber softens the lemon edge and makes the whole glass taste colder than it is.
2. The Pink Cloud
The one that photographs itself. Serve this at a gathering and someone will ask for the recipe before they finish the glass.
- 200ml Pink Lemonade
- 100ml cold hibiscus (zobo) brew, unsweetened
- Plenty of ice
- A sprig of mint
Fill the glass with ice, pour the zobo in first, then pour the Pink Lemonade slowly over the back of a spoon so the two layers meet gently. The hibiscus deepens the pink and adds a light tartness underneath.
3. The Ginger Spark
For people who like a little heat. This one clears the palate beautifully after pepper soup or suya.
- 200ml Old Fashioned Lemonade
- 1 teaspoon fresh grated ginger (or 2 thin slices, lightly crushed)
- Ice
- A lemon wheel
Let the ginger sit in the lemonade for two minutes before you pour over ice. Strain if you grated it. The ginger bite sits right behind the lemon and keeps you sipping.
4. The Fifun Freeze
The light one. Fifun Todos is the easy everyday bottle, and frozen fruit turns it into a slushy mocktail with zero added sugar.
- 200ml Fifun Todos
- A handful of frozen pineapple or mango chunks
- A squeeze of lime
Blend everything for twenty seconds. That is the whole recipe. Serve with a straw and a lime wedge.
5. The Owambe Punch Bowl
The party version, scaled for a dispenser. Serves about ten glasses.
- 2 litres Old Fashioned Lemonade (one family pack bottle)
- 1 litre Pink Lemonade
- 2 oranges and 1 lemon, sliced thin
- 1 cucumber, sliced
- A full tray of ice, added just before serving
Combine everything in the dispenser thirty minutes before guests arrive so the fruit perfumes the drink, then ice it at the last moment so it stays bright instead of watered down.
Three rules for every mocktail
- Everything cold before you start. A room temperature mixer melts your ice and flattens the drink.
- Ice last, always. It is the difference between a crisp glass and a diluted one.
- Taste before you serve. Real-fruit lemonade varies less than concentrate drinks, but your fruit and ginger will vary. Adjust, then pour.
